It’s almost asparagus season here, and given the weather, it might already be in season where you are, so today, let’s look at the delicious stalks.
Every spring many of us harvest the new shoots of Asparagus out of our gardens or look for wild patches in our neighborhood parks. Asparagus was brought to North America from France back in the 1600 and 1700s but wasn't commercially grown until the 1860s. Its [sic] originally from the Europe, North Africa, and Asia, where it grows wild along the seashores and riverbanks. It was probably domesticated by the Romans and has been widely cultivated ever since.

Spanish Asparagus in Almond & Garlic Sauce
Traditionally, this dish is made cardo (thistle) instead of asparagus. However, finding cardo outside of Spain is very difficult. So I used asparagus instead. Which in my opinion, actually makes this dish even better.

Bacon Asparagus “Dutch Baby”
A Dutch baby is large enough to be shared and decadent enough to serve as dessert. Its ancestor is the crepe-like German pancake known as pfannkuchen. Many credit Seattle’s Maca Cafe for adapting the recipe in the early 20th century. Legend has it that when Victor Maca’s daughter first saw the German-derived dish, she mispronounced Deutsch (“German”) as “Dutch,” and the Dutch baby was born.
